Ingredients

Banana Milk

  • cups milk of choice
  • 1 cup plain or vanilla Greek yogurt
  • 2 bananas ripe
  • 1 scoop vanilla protein powder
  • 1 teaspoon cinnamon
  • Pinch sea salt

If not using protein powder, substitute with:

  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract

Oats

  • cups old-fashioned rolled oats
  • 4 tablespoons chia seeds

Optional Toppings

  • banana slices Fresh
  • vanilla wafers or graham crackers Crushed
  • Greek yogurt
  • Peanut butter

Instructions

  • Add the milk, Greek yogurt, bananas, protein powder, cinnamon, and sea salt to a blender. If you're not using protein powder, add the maple syrup and vanilla extract instead. Blend until completely smooth.
  • Blend on high for 30–45 seconds, or until completely smooth and creamy.
  • Divide the rolled oats and chia seeds evenly between 4 jars or containers. Pour the banana milk evenly between the four jars.
  • Stir each jar well to make sure the oats and chia seeds are evenly distributed, and there are no dry pockets at the bottom.
  • Cover and refrigerate for at least 2 hours, but preferably overnight. The oats and chia seeds will absorb the liquid as they sit, creating a thick, creamy pudding-like consistency.
  • Before serving, top with fresh banana slices, a spoonful of Greek yogurt or peanut butter, and crushed vanilla wafers or graham crackers, if desired.
  • Enjoy cold, or let the oats sit at room temperature for a few minutes before eating.

Notes

  • Use ripe bananas: The riper the bananas, the sweeter and more flavorful your oats will be.
  • Plain vs. vanilla yogurt: Plain Greek yogurt gives you a more balanced flavor, while vanilla Greek yogurt makes the oats sweeter and more dessert-like.
  • Protein powder: Vanilla protein powder adds sweetness and protein. Different brands vary in sweetness, so taste the banana milk before assembling and adjust if needed.
  • Don't skip the chia seeds: They help thicken the mixture and give the oats their creamy, pudding-like texture.
  • Adjust the consistency: If the oats are thicker than you'd like the next morning, stir in a splash of milk until you reach your preferred consistency.
  • Banana topping: Add fresh banana slices just before serving rather than the night before to prevent them from browning.
  • Make it taste more like banana pudding: Crushed vanilla wafers or graham crackers on top add the classic banana-pudding flavor and a little crunch.
