Cheeseburger Sliders

These cheeseburger sliders fill dinner rolls with a creamy seasoned ground beef and cheddar mixture topped with melted mozzarella and baked until golden for an easy crowd-pleasing appetizer or weeknight dinner ready in 30 minutes.

Ingredients

  • 1 lb ground beef 90/10 or 93/7 are best
  • 1/2 tablespoon olive oil
  • ¼ yellow onion finely diced
  • 1½ teaspoons steak seasoning
  • 1 teaspoon garlic powder
  • 3 tablespoons cream cheese
  • ⅛ cup bone broth or water
  • 8 slices medium cheddar cheese
  • 3 oz mozzarella shredded (or just more sliced cheese)
  • 12 dinner rolls
  • 1 tablespoon unsalted butter melted, plus more for greasing the baking sheet
  • ½ tablespoon sesame seeds

Instructions

  • Preheat your oven to 350°F. Lightly grease a rimmed baking sheet with butter.
  • Heat the olive oil in a large skillet over medium-high heat. Add the diced onion and cook for 2–3 minutes, until softened. Add the ground beef and break it apart with a spatula.
  • Sprinkle in the steak seasoning and garlic powder. Cook for 5–7 minutes, breaking the beef into small crumbles, until browned and cooked through.
  • Reduce the heat to low. Add the cream cheese and bone broth or water. Stir until the cream cheese has melted and the mixture is evenly combined and creamy. Remove from the heat.
  • Without separating the rolls, slice the entire package of dinner rolls horizontally to create one large top and bottom.
  • Place the bottom half of the rolls on the prepared baking sheet. Arrange the 4 slices of cheddar evenly over the rolls, then spread the beef mixture evenly over the cheese.
  • Sprinkle the shredded cheddar or mozzarella evenly over the beef.
  • Place the top half of the rolls over the cheese and beef mixture. Brush the tops with the melted butter, then sprinkle evenly with sesame seeds.
  • Bake for 12–15 minutes, or until the cheese is completely melted and the tops of the rolls are golden brown.
  • Let the sliders rest for 2–3 minutes, then cut between the rolls and serve warm.

Notes

  • Don't overcook the beef. Cook just until browned and cooked through so the sliders stay juicy.
  • Cream cheese adds moisture: The cream cheese and broth create a creamy beef mixture that helps keep the filling tender and flavorful.
  • Cheese options: Medium cheddar gives these classic cheeseburger flavor, while mozzarella makes them extra melty. You can use either combination listed in the ingredients.
  • For extra browning: If the tops aren't quite as golden as you'd like after 15 minutes, broil for 1–2 minutes, watching closely so the rolls don't burn.
  • Let them rest: A few minutes of resting makes the sliders easier to cut and helps keep the cheese from sliding out.
