Ingredients

  • 1 lb ground chicken 90-92% is best, otherwise fritters will be a little dry
  • 1 egg
  • 1/3 cup Italian bread crumbs
  • 2 tbsp milk
  • 1/2 cup grated parmesan
  • 1/2 cup grated mozzarella
  • 1 cup fresh spinach parsley or chives chopped
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp pepper

Prepare the mixture

  • In a bowl, combine ground chicken, egg, breadcrumbs, milk, cheese, spinach (or other greens suggested), garlic powder, onion powder, salt, and pepper. Mix well.

Form the Fritters

  • Scoop small portions and shape them into patties.

Fry Until Golden

  • Heat oil in a pan and fry each fritter until golden brown and crispy on both sides. Alternatively, you can bake them at 400 degrees for 20 minutes, flipping halfway through.

  • Pair with your favorite side and a dipping sauce like garlic aioli, ranch, or spicy mayo.

Notes

  • Use 90 to 92% lean ground chicken. Leaner than that and the fritters can turn dry. The fat content keeps them juicy and helps them hold together in the pan.
  • Wet hands or a light coating of oil on your palms makes shaping the patties much easier. Ground chicken is sticky and this saves a lot of frustration.
  • Don't crowd the pan. Give each fritter space so it gets a proper golden crust rather than steaming against its neighbors.
  • These are excellent for meal prep. Make a batch, refrigerate, and reheat in the air fryer at 375°F for 4 to 5 minutes to bring the crust back.
