Chicken Bacon Ranch Casserole

This chicken bacon ranch casserole bakes cubed chicken with broccoli, ranch dressing, mozzarella, cheddar, and bacon in one dish for a cheesy, crowd-pleasing dinner ready in 35 minutes.

Equipment

Ingredients

  • 2 lbs boneless skinless chicken breasts, cut into 1-inch cubes
  • 1 tbsp olive oil
  • 3/4 tsp salt
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt-free seasoning like Ms. Dash or garlic herb blend
  • 8 bacon strips cooked and chopped
  • 3 –4 cloves garlic minced
  • 1 cup ranch dressing
  • 1 cup shredded mozzarella cheese divided
  • 1 cup shredded cheddar cheese divided
  • 4-5 cups broccoli florets fresh, bite-sized pieces

Instructions

  • Preheat oven to 400°F.

Season & bake chicken

  • Add cubed chicken to a 9x13 baking dish. Drizzle with olive oil and toss with salt, garlic powder, onion powder, and seasoning blend.
  • Spread evenly and bake for 15 minutes.

Drain excess liquid (important step)

  • Remove the dish from the oven and carefully drain any liquid released from the chicken. This prevents a watery casserole.

Assemble the casserole

  • Add minced garlic, broccoli, ranch dressing, half of each cheese. Stir everything together until evenly coated.

Top it off

  • Sprinkle remaining mozzarella and cheddar evenly over the top, then add chopped bacon.

Final bake

  • Return to oven and bake for 20 minutes, until the cheese is melted and bubbly and broccoli is tender.

Optional (but recommended)

  • Broil for 2–3 minutes at the end for a golden, crispy cheese topping.
