This chipotle chicken avocado melt loads ciabatta rolls with shredded rotisserie chicken, smoked Gouda, and a smoky chipotle mayo then melts it in the oven and tops with fresh avocado and roasted red peppers.

Ingredients

For the Sandwiches

  • 3 ciabatta rolls sliced in half horizontally
  • 2 cups shredded rotisserie chicken
  • 3 slices smoked Gouda cheese
  • ¼ cup roasted red peppers sliced or diced tomatoes
  • 1 ripe avocado sliced
  • 1 tablespoon fresh cilantro finely chopped

For the Chipotle Mayo

  • cup mayonnaise
  • 1 tablespoon chipotle sauce from a can of chipotles in adobo
  • ½ teaspoon garlic powder
  • ½ teaspoon salt

Instructions

Make the Chipotle Mayo

  • In a small bowl, whisk together the mayonnaise, chipotle sauce, garlic powder, and salt until smooth and well combined.

Assemble the Sandwiches

  • Preheat the oven to 350°F.
  • Spread the chipotle mayo evenly over the cut sides of the ciabatta rolls. Divide the shredded chicken evenly between the bottom halves of the rolls and top each with a slice of smoked Gouda cheese.
  • Place the open-faced sandwiches on a baking sheet and bake for 10–15 minutes, or until the cheese is melted and the bread is warm and lightly toasted.
  • Remove from the oven and top each sandwich with sliced avocado, roasted red peppers or diced tomatoes, and fresh cilantro. Close the sandwiches, slice, and serve immediately.

Notes

  • Add the avocado after baking: This keeps it fresh, creamy, and vibrant.
  • Use leftover chicken: Rotisserie chicken makes this recipe especially quick and easy.
  • Adjust the spice level: Add more or less chipotle sauce depending on how spicy you like your sandwich.
  • Use focaccia: If using a loaf of focaccia instead of ciabatta, cut it into 3 equal portions and slice each portion horizontally.
  • Want extra crunch? Toast the sandwiches under the broiler for 1–2 minutes at the end, watching carefully to prevent burning.
