Chocolate Peanut Butter Yogurt Date Bark (Easy Frozen Snack)

This chocolate peanut butter yogurt date bark layers Medjool dates, peanut butter Greek yogurt, crushed pretzels, and melted chocolate into a no-bake frozen treat ready in under an hour.

Ingredients

  • 24 Medjool dates pitted
  • 1 cup Greek yogurt full-fat for best texture
  • 1 tsp vanilla extract
  • 3 tbsp peanut butter powder or protein peanut butter powder or substitute ½ cup creamy or crunchy peanut butter
  • 1 tbsp milk
  • ½ cup pretzels lightly crushed
  • ½ cup chocolate chips
  • 1 tsp coconut oil
  • Flaky sea salt optional

Instructions

Prep the dates

  • Line a baking sheet with parchment paper. Slice each date open lengthwise and remove pits if needed. Arrange them close together, cut side up.

Form the base

  • Lightly grease the bottom of a glass (or place parchment on top) and press the dates down into a flat, even layer. The tighter they’re packed, the better the bark holds together.

Make the peanut butter yogurt layer

  • In a small bowl, mix Greek yogurt with peanut butter powder and milk until smooth and spreadable. Skip milk if your yogurt does not have super thick texture. (If using regular peanut butter, simply stir it into the yogurt.)

Spread the filling

  • Evenly spread the yogurt mixture over the flattened date layer.

Add crunch

  • Sprinkle crushed pretzels evenly over the top, gently pressing them into the yogurt layer.

Melt the chocolate

  • In a microwave-safe bowl, combine chocolate chips and coconut oil. Microwave in 30-second intervals, stirring between each, until smooth.

Top and finish

  • Drizzle the melted chocolate over the bark. Sprinkle with flaky sea salt if desired.

Chill

  • Refrigerate or freeze for at least 30–45 minutes, or until fully set.

Slice & serve

  • Cut or break into pieces and enjoy!

Notes

  • Let it sit at room temperature for 5–10 minutes before eating for a softer bite
  • Be sure to spray the bottom of your glass with a bit of cooking spray before mashing the dates because they are quite sticky!
  • If using liquid peanut butter, make the peanut butter easier to spread, microwave it for a short time (20-30 seconds) first
  • Add chopped peanuts or almonds for extra crunch
  • Use dark chocolate for a richer, less sweet flavor
Storage instructions:
Store in a sealed airtight container in the freezer for up to 5-7 days. The pretzels will begin to soften slightly after that as they absorb moisture from the yogurt layer. Keep the container tightly sealed to prevent freezer burn.
