Cucumber, Avocado, and Feta Salad

This cucumber avocado feta salad combines sliced cucumbers, diced avocado, red onion, fresh dill, and crumbled feta in a bright lemon garlic dressing. Ready in 10 minutes and perfect as a side or light meal.

Ingredients

For the salad:

  • 6 mini cucumbers thinly sliced
  • 2 large avocados diced (ripe but firm)
  • ½ cup crumbled feta cheese
  • ¼ cup red onion thinly sliced
  • ¼ cup fresh dill finely chopped

For the lemon dressing:

  • ¼ cup freshly squeezed lemon juice from about 1½–2 lemons
  • ¼ cup extra-virgin olive oil
  • ½ teaspoon salt plus more to taste
  • ½ teaspoon Italian seasoning
  • 1 small garlic clove finely grated
  • Freshly cracked black pepper to taste
  • ½ teaspoon honey or maple syrup optional, for balancing acidity

Instructions

Make the dressing

  • Add all ingredients to a small bowl or a mason jar with a tight-fitting lid. Whisk vigorously or shake well until the dressing is fully combined and slightly creamy. For an extra smooth texture, use an immersion blender.

Assemble the salad

  • In a large bowl, add the sliced cucumbers, diced avocado, crumbled feta, red onion, and fresh dill.

Toss gently

  • Drizzle the dressing over the salad and gently toss until everything is evenly coated. Be careful not to overmix to keep the avocado chunks intact.

Taste and adjust

  • Taste and adjust with additional salt, pepper, or a squeeze of lemon if needed.

Serve immediately

  • Serve right away for the freshest flavor and best texture.

Notes
