Healthy Pumpkin Bars Recipe
These easy pumpkin bars are soft, chewy, and packed with pumpkin spice flavor, peanut butter, pecans, and chocolate chips. Made with pumpkin puree and oat flour, they're a simple fall treat for breakfast, snacks, or dessert.

- 1 cup pumpkin puree
- ⅓ cup maple syrup
- ½ cup natural creamy peanut butter
- 2 eggs
- 1 tsp vanilla extract
- ¾ cup oat flour
- 2 tbsp ground flaxseed
- 2 tsp pumpkin pie spice
- 1 tsp baking powder
- ¼ tsp kosher salt
- ⅓ cup chopped pecans plus more for topping
- ½ cup semi-sweet chocolate chips plus more for topping
Prep: Preheat oven to 350°F. Line a 9x9-inch baking dish with parchment paper.
Make the batter: Whisk together pumpkin puree, maple syrup, peanut butter, eggs, and vanilla until smooth. Add oat flour, flaxseed, pumpkin pie spice, baking powder, and salt. Whisk until just combined.
Add the mix-ins: Fold in the chocolate chips and pecans. Transfer the batter to the prepared pan and spread evenly. Sprinkle with additional pecans and chocolate chips, if desired.
Bake: Bake for 30–35 minutes, or until a toothpick inserted in the center comes out mostly clean. Cool in the pan for 20 minutes, then lift out using the parchment overhang. Cool completely before slicing into 16 bars.
- PEANUT BUTTER: Use natural creamy peanut butter and stir well before measuring.
- STORE: Store in an airtight container at room temperature for up to 2 days, then refrigerate for up to 4 additional days.
- FREEZE: Freeze sliced bars in a freezer-safe bag or container for up to 2 months. Thaw overnight in the refrigerator.
