In a medium bowl, combine all the ingredients. Stir until well combined.
Taste and add a little more lemon, salt, and pepper, if necessary.
Serve it with crackers, in a pita bread, in a lettuce wrap, or make a sandwich or wrap. Feel free to top with chopped tomatoes, kalamata olives, extra feta, and herbs.
Notes
How to Store: Store in an airtight container in the refrigerator. It’s best eaten within 3 to 4 days. The flavors develop more over time, but be sure to stir before each serving to mix in any separated liquid.
