Ingredients

Carrots:

  • 2 pounds carrots
  • 3 tbsp olive oil
  • 2 tbsp honey
  • 1/2 tsp sweet paprika
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • Pinch of cayenne pepper

Whipped Feta:

  • 1 cup Greek yogurt
  • 4 –6 oz feta
  • 1 tbsp olive oil
  • 1 garlic clove
  • Zest and juice of 1/2 lemon
  • Water optional (be careful to not add too much, start with 1 tsp if needed)
  • Salt and pepper to taste

Toppings:

  • 2 –3 tbsp crushed pecans
  • 2 tbsp chopped dill or parsley
  • 1 –2 tbsp honey

Instructions

  • Preheat oven to 450°F.
  • Toss carrots with oil, honey, and spices.
  • Roast for 18–25 minutes until tender.
  • Blend whipped feta ingredients until smooth.
  • Spread feta on plate, top with carrots and toppings.
