Honey Roasted Carrots with Whipped Feta

Carrots:
- 2 pounds carrots
- 3 tbsp olive oil
- 2 tbsp honey
- 1/2 tsp sweet paprika
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1/2 tsp salt
- Pinch of cayenne pepper
Whipped Feta:
- 1 cup Greek yogurt
- 4 –6 oz feta
- 1 tbsp olive oil
- 1 garlic clove
- Zest and juice of 1/2 lemon
- Water optional (be careful to not add too much, start with 1 tsp if needed)
- Salt and pepper to taste
Toppings:
- 2 –3 tbsp crushed pecans
- 2 tbsp chopped dill or parsley
- 1 –2 tbsp honey
Preheat oven to 450°F.
Toss carrots with oil, honey, and spices.
Roast for 18–25 minutes until tender.
Blend whipped feta ingredients until smooth.
Spread feta on plate, top with carrots and toppings.
