Lemon Blueberry Baked Oats (No Banana)

These lemon blueberry baked oats combine rolled oats, protein powder, applesauce, fresh lemon, and blueberries baked in a 9x9 dish for an easy high-protein make-ahead breakfast ready in 50 minutes.

Ingredients

  • cups old-fashioned rolled oats
  • ¼ cup oat flour
  • 1 scoop vanilla or unflavored protein powder *if you don’t have protein powder, see notes
  • 2 large eggs
  • ¾ cup applesauce unsweetened
  • 2-3 tablespoons pure maple syrup omit or adjust this amount if using really sweet protein powder
  • cups milk of choice
  • 1 teaspoon baking powder
  • juice of 1/2 lemon, about 1 tablespoons
  • 1 teaspoon lemon zest
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 1 cup fresh or frozen blueberries

For topping/serving:

  • Greek yogurt
  • maple syrup

Instructions

  • Preheat your oven to 350°F. Lightly grease a 9x9-inch baking dish with cooking spray or butter.
  • In a large bowl, whisk together the eggs, applesauce, maple syrup, milk, lemon juice, lemon zest, and vanilla extract until smooth.
  • Add the rolled oats, oat flour, protein powder, baking powder, and salt. Stir until everything is evenly combined.
  • Tip: you can also mix everything directly in the baking dish but make sure to mix it well to avoid dry pockets.
  • Gently fold in the blueberries, reserving a few to scatter over the top if desired.
  • Pour the mixture into the prepared baking dish and spread it into an even layer. Bake for 35–45 minutes, or until the edges are lightly golden and the center is set but still slightly soft.
  • Let the baked oats cool for at least 10–15 minutes before slicing. Serve warm or chilled with Greek yogurt, extra blueberries, or a drizzle of maple syrup.

Notes

  • Protein powder: Vanilla or unflavored protein powder works best. Different protein powders absorb liquid differently, so if your mixture seems unusually thick, add another splash of milk.
  • *No protein powder: Replace the protein powder with ¼ cup additional oat flour, making ½ cup total oat flour.
  • Fresh or frozen blueberries: Both work well. If using frozen blueberries, add them straight from the freezer without thawing.
  • For stronger lemon flavor: Don't skip the lemon zest. The zest provides much more concentrated lemon flavor than the juice alone.
  • Don't overbake: The center should be set but still soft. Overbaking can make baked oats dry, particularly when using protein powder.
  • For sweeter baked oats: Add another tablespoon of maple syrup or use sweetened vanilla protein powder.
  • For meal prep: Store covered in the refrigerator for up to 4–5 days. Reheat individual portions in the microwave until warm.
