Ingredients

Crispy Potatoes

  • 1-1.5 lb potatoes diced into 1-inch cubes
  • 2 tbsp olive oil
  • 1 tsp sweet paprika
  • 1 tsp garlic powder
  • ½ tsp salt
  • ¼ tsp cracked black pepper

Taco Beef

  • 1 tbsp extra-virgin olive oil
  • ½ onion finely chopped
  • 1 lb ground beef
  • ¾ packet taco seasoning Siete brand is my favorite
  • 1 tbsp tomato paste
  • ¼ cup bone broth or water

Guacamole

  • 2 ripe avocados
  • 1 tbsp cilantro finely chopped
  • ¼ red onion finely diced
  • Juice of 1 lime
  • ½ tsp sea salt flakes
  • ½ tsp garlic powder
  • ¼ tsp ground cumin
  • ¼ tsp freshly cracked black pepper
  • Pinch of chili powder optional

Fresh Salsa

  • 2 tomatoes finely diced
  • 1 tbsp cilantro finely chopped
  • ¼ red onion finely diced
  • Juice of ½ lime
  • ½ tsp sea salt flakes
  • ¼ tsp freshly cracked black pepper

For Serving

  • 2 cups grated Mexican cheese blend

Instructions

Crispy Potatoes

  • In a large bowl, toss potatoes with olive oil, paprika, garlic powder, salt, and black pepper.
    Tip: if you want your potatoes to be extra crispy, wash the cut-up potatoes in cold water, rinse and dry really well before adding oil and the seasoning.
  • Cook the potatoes:
    Air Fryer: Cook at 400°F for 15–20 minutes, shaking halfway, until golden and crispy.
    Oven: Bake at 450°F for 30 minutes, flipping once, until crispy and tender.

Taco Beef

  • Heat olive oil in a skillet over medium heat. Add onion and sauté until softened.
  • Add ground beef and cook for 5–10 minutes, breaking it up as it browns. Drain excess fat if needed.
  • Stir in taco seasoning, tomato paste, and bone broth (or water). Simmer 2–3 minutes until saucy.

Guacamole

  • Add all guacamole ingredients to a bowl and mash until mostly smooth. Adjust salt or lime to taste.

Salsa

  • Combine all salsa ingredients in a bowl and mix well.

Assemble

  • Divide crispy potatoes between bowls. Top with taco beef, shredded cheese, guacamole, and fresh salsa. Serve warm.
