No-Bake Carrot Cake Energy Balls

Ingredients

  • 1 cup medjool dates (4-5 dates) pits removed
  • 1 cup finely shredded carrots
  • 1 cup walnuts
  • 1 tbsp chia seeds
  • 1 scoop of unflavored protein powder dates are already very sweet so if you add a sweet protein powder, it will might be overpowering or 2 scoops of collagen
  • 1/3 cup shredded unsweetened coconut
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • pinch of salt
  • 1 tsp vanilla extract
  • extra 1/2 cup shredded coconut for rolling

Instructions

  • If your dates are dry, soak them in a hot water and then drain well. This will help to soften them and to be more gentle on your food processor.
  • Add all the ingredients to a food processor and pulse until combined.
  • Scoop out some dough using a spoon and roll into balls.
  • Roll each ball into the shredded coconut to coat.
  • Place in the fridge to firm up for at least one hour
