- 10 chicken drumsticks skin-on (about 3 pounds total)
- 3 tablespoons olive oil
- 2 teaspoons kosher salt or 1½ teaspoons table salt
- 2 teaspoons garlic powder
- 2 teaspoons onion powder
- 2 teaspoons paprika
- ¼ teaspoon black pepper
- ¼ teaspoon cayenne pepper or more to taste
Preheat the oven to 400°F. Line a large baking sheet with foil for easier cleanup and then add the rack on top.
Pat the chicken drumsticks dry with paper towels and arrange them in a single layer on the prepared baking rack.
In a medium bowl, combine the olive oil, salt, garlic powder, onion powder, paprika, black pepper, and cayenne pepper until a paste forms.
Using your hands or a pastry brush, evenly coat the drumsticks with the seasoning mixture.
Bake uncovered for 40–45 minutes, or until the chicken is fully cooked and the internal temperature reaches at least 165°F when measured with an instant-read thermometer away from the bone.
For the juiciest and most tender dark meat, continue cooking until the internal temperature reaches 175–180°F.
Baste the drumsticks with the pan juices before serving, if desired. Serve immediately.
