Ingredients

  • 10 chicken drumsticks skin-on (about 3 pounds total)
  • 3 tablespoons olive oil
  • 2 teaspoons kosher salt or 1½ teaspoons table salt
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 2 teaspoons paprika
  • ¼ teaspoon black pepper
  • ¼ teaspoon cayenne pepper or more to taste

Instructions

  • Preheat the oven to 400°F. Line a large baking sheet with foil for easier cleanup and then add the rack on top.
  • Pat the chicken drumsticks dry with paper towels and arrange them in a single layer on the prepared baking rack.
  • In a medium bowl, combine the olive oil, salt, garlic powder, onion powder, paprika, black pepper, and cayenne pepper until a paste forms.
  • Using your hands or a pastry brush, evenly coat the drumsticks with the seasoning mixture.
  • Bake uncovered for 40–45 minutes, or until the chicken is fully cooked and the internal temperature reaches at least 165°F when measured with an instant-read thermometer away from the bone.
  • For the juiciest and most tender dark meat, continue cooking until the internal temperature reaches 175–180°F.
  • Baste the drumsticks with the pan juices before serving, if desired. Serve immediately.

Notes

  • Pat the chicken dry before seasoning to help the skin crisp in the oven.
  • Use a baking rack so heat circulates evenly around each drumstick.
  • Bake until the internal temperature reaches at least 175°F for juicy dark meat.
  • Broil briefly at the end for extra crispiness if you want.
