Ingredients

  • pounds boneless skinless chicken thighs or chicken breasts
  • cup Japanese BBQ sauce or your favorite teriyaki-style sauce I used Bachan's Japanese BBQ Sauce
  • 2 tablespoons Dijon mustard or stone-ground Dijon
  • 1 lemon juice of

Instructions

Marinate

  • In a large bowl or zip-top bag, whisk together the Japanese BBQ sauce, Dijon mustard, and fresh lemon juice until smooth. Add the chicken and toss until every piece is evenly coated. Cover and refrigerate for at least 2 hours or up to 24 hours.

Grill

  • Preheat to medium-high heat. Cook for 5 to 7 minutes per side until the internal temperature reaches 165°F.

Air Fryer

  • Preheat to 400°F. Cook in a single layer for 16 to 18 minutes, flipping halfway, until the internal temperature reaches 165°F.

Oven

  • Preheat to 425°F. Place on a parchment-lined baking sheet and bake for 25 to 30 minutes until the internal temperature reaches 165°F.
  • Rest for 5 minutes before slicing or serving.

Notes

  • Marinating overnight produces the most flavorful and tender chicken.
  • Chicken thighs stay extra juicy and are more forgiving during cooking, while chicken breasts are a leaner option.
  • Cooking times may vary depending on the thickness of the chicken. Always use an instant-read thermometer and cook to an internal temperature of 165°F.
