Equipment

  • Mason jar or small bowl

Ingredients

  • ¼ cup freshly squeezed lemon juice from about 1½–2 lemons
  • ¼ cup extra-virgin olive oil
  • ½ teaspoon salt plus more to taste
  • ½ teaspoon Italian seasoning
  • 1 small garlic clove finely grated
  • Freshly cracked black pepper to taste
  • ½ teaspoon honey or maple syrup optional, for balancing acidity

Instructions

Combine:

  • Add all ingredients to a small bowl or a mason jar with a tight-fitting lid.

Emulsify:

  • Whisk vigorously or shake well until the dressing is fully combined and slightly creamy. For an extra smooth texture, use an immersion blender.

Taste & Adjust:

  • Taste and adjust seasoning as needed—add more salt, pepper, or sweetener to balance the acidity to your liking.

Store:

  • Transfer to an airtight container and refrigerate until ready to use.

Notes

  • Store in the refrigerator for up to 1 week.
  • The dressing may separate or solidify slightly when chilled—this is normal. Let it sit at room temperature for 5–10 minutes, then shake or whisk to recombine before using.
