Equipment

  • Mixing Bowl

Ingredients

  • 2 cups gluten-free rolled or quick oats
  • 1/3 cup chia seeds
  • 3 tablespoons pure maple syrup
  • 1/2 cup pumpkin puree
  • 1/3 cup greek yogurt
  • 1/8 cup almond or peanut butter creamy (microwave it for a little bit if needed to make sure it can get mixed up well)
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 tablespoon pumpkin pie spice
  • 2 1/2 cups milk of choice
  • 1 scoops vanilla protein powder optional and if you use sweet protein powder, decrease the amount of maple syrup by 50%

Instructions

  • Add all the ingredients into a large bowl and mix well until fully combined.
  • Either distribute the mixture into the individual containers (I use 8 oz glass jars and divide this amount among 5 of those) or just cover with an airtight cover and then use as needed.
  • Place in fridge for 4 hours or overnight.

Notes

Store in the refrigerator for up to 4 days.
