Sweet Potato and Turkey Skillet

Equipment

Ingredients

  • 2 tablespoons oil
  • 1 lb ground turkey or substitute ground chicken or beef
  • 4 garlic cloves minced
  • 1 medium sweet potato peeled and cut into 1-inch cubes
  • 1 cup yellow onion diced
  • 1 10 oz can fire-roasted tomatoes
  • 1 15 oz can black beans, rinsed and drained
  • 1/4 cup chicken or vegetable broth
  • 1 cup shredded mozzarella cheese or cheese of choice

Seasonings:

  • 2 teaspoons cumin
  • 1/2 teaspoon chili powder adjust to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt or to taste

Optional Toppings:

  • Fresh cilantro
  • Sour cream
  • Avocado
  • Lime wedges

Instructions

Sauté the aromatics:

  • Heat oil in a large skillet over medium heat. Add diced onion and sauté for about 2 minutes, until softened and fragrant.

Cook the meat:

  • Add ground turkey and cook until browned, breaking it apart as it cooks.

Add flavor:

  • Stir in the minced garlic and all seasonings. Mix well to evenly coat the meat.

Cook the sweet potatoes:

  • Add cubed sweet potatoes, fire-roasted tomatoes, and broth. Stir to combine, then cover with a lid.
  • Cook for 9–10 minutes, or until the sweet potatoes are fork-tender. (Keeping the lid on is key to ensure they cook through.)

Add beans:

  • Stir in the black beans and gently mix until everything is well combined.

Melt the cheese:

  • Reduce heat to medium-low. Sprinkle shredded cheese evenly over the top, cover, and let it melt for 2–3 minutes.

Serve and enjoy:

  • Remove from heat and top with your favorite toppings like cilantro, sour cream, avocado, or a squeeze of fresh lime.
