Sweet Potato and Turkey Skillet

- 2 tablespoons oil
- 1 lb ground turkey or substitute ground chicken or beef
- 4 garlic cloves minced
- 1 medium sweet potato peeled and cut into 1-inch cubes
- 1 cup yellow onion diced
- 1 10 oz can fire-roasted tomatoes
- 1 15 oz can black beans, rinsed and drained
- 1/4 cup chicken or vegetable broth
- 1 cup shredded mozzarella cheese or cheese of choice
Seasonings:
- 2 teaspoons cumin
- 1/2 teaspoon chili powder adjust to taste
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon salt or to taste
Optional Toppings:
- Fresh cilantro
- Sour cream
- Avocado
- Lime wedges
Cook the sweet potatoes:
Add cubed sweet potatoes, fire-roasted tomatoes, and broth. Stir to combine, then cover with a lid.
Cook for 9–10 minutes, or until the sweet potatoes are fork-tender. (Keeping the lid on is key to ensure they cook through.)
Serve and enjoy:
Remove from heat and top with your favorite toppings like cilantro, sour cream, avocado, or a squeeze of fresh lime.
