How to Make Sweet Potato and Turkey Skillet

Step 1. Sauté the aromatics

  • 1 lb ground turkey or substitute ground chicken or beef
  • 4 garlic cloves minced
  • 1 medium sweet potato peeled and cut into 1-inch cubes
  • 1 cup yellow onion diced
  • 1 10 oz can fire-roasted tomatoes
  • 1 15 oz can black beans, rinsed and drained
  • 1/4 cup chicken or vegetable broth
  • 1 cup shredded mozzarella cheese or cheese of choice
Seasonings:
  • 2 teaspoons cumin
  • 1/2 teaspoon chili powder adjust to taste
  • 1 teaspoon garlic powder

    This recipe is incredible! Such a delicious and wholesome family meal!     We made this and absolutely loved it! Such a simple, flavorful, and satisfying dish. I think it’s perfect for a busy weeknight. The combination of sweet potatoes, turkey, beans and spices was spot on. This is definitely going into our regular dinner rotation. Also, I loved the chicken gyro recipe too!!!

    This has become a favorite—we have it every 2-3 weeks—I halve the turkey and use Monterey Jack cheese. I also make the beans separately just bc I don’t like beans 😂 and double the spices. This is one of my favorites—so full of flavor and filling without being heavy. I made it again last night and topped it with a few shakes of tajin and it was SO good!
