How to Make Chicken Gyro Bowls
Step 1: Marinate the Chicken

Yes, I have done this, and it worked really well. I would bake it at 400 for 40-45 minutes and maybe drain some of the liquid halfway through baking (not too much, but just enough to allow the chicken to brown a bit vs boil in the liquid the whole time).
The most flavorful, tender chicken the first time and even has amazing leftovers! A new staple in our house as well as for company and meal trains!

Hi Melissa! You would have to use dairy-free yogurt (it will have a different flavor, though, especially if you use a coconut one). For the chicken marinade, you could try adding a little bit of dairy-free mayo too, as another option or just omit yogurt overall. The chicken will be a little bit more dry but still delicious, especially if you use chicken thighs.
