How to Make Chicken Gyro Bowls

Step 1: Marinate the Chicken

Mix yogurt, lemon juice, olive oil, and spices. Add chicken and marinate for at least 2 hours (overnight is best).

Step 2: Cook the Chicken

  • Air Fryer: 400°F for 15–18 minutes, flipping halfway
  • Oven: Bake at 400°F for 45 minutes
    Cook until internal temp reaches 165°F.

Step 3: Make the Turmeric Rice

Melt butter, sauté garlic, then add rice and toast lightly. Add turmeric, lemon juice, and broth. Cover and simmer until fluffy.

Step 4: Prepare Tzatziki

Mix all ingredients in a bowl and refrigerate until ready.

Ingredients
  

For the Greek Chicken Gyros:
  • 2.5 lbs boneless skinless chicken thighs
  • 1 cup plain Greek yogurt
  • 1/4 cup lemon juice
  • 1/2 cup olive oil
  • 1 tbsp kosher salt
  • 1 tbsp minced garlic
  • 1 tbsp ground coriander
  • 1 tbsp paprika
  • 1 tbsp ground cumin
  • 1/2 tsp cayenne pepper
For Turmeric Rice:
  • 1 cup basmati rice washed
  • 2 tbsp butter
  • 2 garlic cloves minced
  • 1 tsp turmeric
  • 1 tbsp lemon juice
  • 2 cups bone broth or water
  • Salt to taste
For Tzatziki Sauce:
  • 1/2 cup grated cucumber no need to squeeze the liquid out but if you use thinner consistency Greek yogurt, like Stonyfield, squeeze out the liquid
  • 1 cup thick whole milk Greek yogurt
  • 1 tbsp lemon juice
  • 1/2 tbsp olive oil
  • 1 tsp garlic powder or 1 garlic clove
  • 1/2 tsp salt
  • 1 tbsp fresh dill
For Greek Salad:
  • 1 English cucumber
  • 1 pint cherry tomatoes
  • 1/2 cup olives kalamata or green
  • 1 tbsp fresh dill
  • 4 oz feta cheese
Salad Dressing:
  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar or olive juice
  • Juice of 1/2 lemon
  • 1/2 tsp garlic powder
  • 1/2 tsp oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper

  • This recipe is super versatile. If you don’t have time to make all the components of this dish, just use the chicken marinade recipe and add whatever rice you have on hand, a bag of salad, store bought tzatziki sauce. This chicken recipe will elevate any meal!
  • You can bake the chicken in the same pan that you marinated it in if it’s an oven-safe dish for easy cleanup. Bake for 40-45 minutes and drain some of the liquid halfway through baking time to allow the chicken to brown on the top.

      Yes, I have done this, and it worked really well. I would bake it at 400 for 40-45 minutes and maybe drain some of the liquid halfway through baking (not too much, but just enough to allow the chicken to brown a bit vs boil in the liquid the whole time).

    1. Hi Melissa! You would have to use dairy-free yogurt (it will have a different flavor, though, especially if you use a coconut one). For the chicken marinade, you could try adding a little bit of dairy-free mayo too, as another option or just omit yogurt overall. The chicken will be a little bit more dry but still delicious, especially if you use chicken thighs.
