Ingredients Needed To Make Crispy Baked Chicken & Veggie Tacos
The Filling
Ground chicken or turkey at 90 to 92% lean. The fat content keeps the filling moist and flavorful through the oven bake. Finely diced onion, minced garlic, and chopped zucchini add vegetable depth and texture. Fire-roasted corn adds a smoky sweetness. Cumin, paprika, chili powder, salt, and pepper are the seasoning blend. Salsa stirred in at the end adds moisture and an extra layer of flavor throughout.
The Tacos
Small flour or corn tortillas … both work, flour gets slightly crispier, corn is more traditional. Shredded cheese layered inside and on top of the filling melts into gooey pockets throughout each taco. Olive oil brushed on the outside before baking is what produces the golden crunchy exterior.
The Avocado Yogurt Green Sauce
Half an avocado, Greek yogurt, fresh cilantro or parsley, a small clove of garlic, lime juice, salt, and water blended smooth. It’s creamy, bright, slightly tangy, and so good you’ll want to drizzle it on everything.
How to Make Crispy Baked Ground Chicken & Veggie Tacos
Step 1: Make the Filling
Preheat the oven to 400°F. Cook the ground chicken in a skillet over medium heat until mostly browned. Add the onion, garlic, and zucchini and sauté for 3 minutes. Add the corn and cook 2 more minutes. Stir in all the seasonings then add the salsa and simmer for 2 to 3 minutes. Remove from heat.

Step 2: Warm and Fill the Tortillas
Warm the tortillas in the microwave for 30 seconds until soft and pliable. Working one at a time, add a layer of cheese to one half of each tortilla. Spoon 2 to 3 tablespoons of filling over the cheese. Add a little more cheese on top and fold the tortilla over. Don’t overfill — a little goes a long way and overfilled tacos won’t crisp properly.


Step 3: Bake
Line a baking sheet with parchment. Arrange the tacos in a single row. Brush the tops lightly with olive oil. Place a second baking sheet directly on top to press them flat. Bake for 10 minutes with the top pan on. Remove the top pan and bake uncovered for another 12 to 15 minutes until deeply golden and crispy on the outside.
Step 4: Make the Green Sauce
Blend the avocado, Greek yogurt, cilantro or parsley, garlic, lime juice, salt, and water until completely smooth. Add more water a tablespoon at a time until the sauce reaches a drizzleable consistency. Taste and adjust seasoning.
Storing and Reheating
Store leftover tacos in a sealed airtight container in the refrigerator for up to 3 days. Reheat in the air fryer at 375°F for 4 to 5 minutes to restore the crispy exterior … this is by far the best method. The oven at 375°F for 8 to 10 minutes also works. The microwave is the last resort and will soften the outside significantly. Store the green sauce separately in a sealed jar for up to 3 days.

- Preheat your oven to 400°F (200°C).
- In a large skillet over medium heat, cook the ground chicken until mostly browned.
- Add the onion, garlic, and zucchini. Sauté for about 3 minutes, until softened. Add corn and sauté for another 2 minutes.
- Stir in the chili powder, cumin, paprika, salt, and black pepper. Mix well.
- Add the salsa and let it simmer for 2–3 minutes to blend the flavors. Remove from heat.
- Warm the tortillas in the microwave for 30 seconds, or until they’ve softened to make them pliable.
- Once the tortillas are soft, add some cheese to one side of them, followed by a scoop of the meat mixture and more cheese.
- Spoon 2–3 tablespoons of the chicken and veggie mixture onto one side of each tortilla.
- Repeat the process, then line up the tacos on a lined baking sheet.
- Once done, take a second baking sheet and place it on top of the first baking sheet with the tacos.
- Bake covered for 10 minutes, then take the top baking sheet off and bake uncovered for another 12-15 minutes, or until golden brown and crispy.
- Blend all the ingredients listed in a blender and enjoy!
