The BBQ Chicken
Chicken breasts or thighs cut into bite-sized pieces. Rememeber, thighs are juicier and more forgiving, breasts are leaner, but both work great. Smoked paprika, chili powder, onion powder, salt, and pepper season the outside. Minced garlic goes in right before the BBQ sauce. A quarter cup of your favorite BBQ sauce coats everything at the end.
The Crispy Potatoes
Potatos cut into 1-inch cubes. I prefer Green Giant Idahoan Potatoes for this recipe! Olive oil, paprika, garlic powder, salt, and pepper. Air fryer or oven, both work.
The Toppings
This is where you make the bowl yours. Shredded cheese that melts while everything is hot. Shredded lettuce or coleslaw for crunch. Avocado for creaminess. Pickled onions for tang. Jalapeños for heat. Extra BBQ sauce drizzled over the top because obviously.

How to Make BBQ Chicken and Potato Bowls
Step 1: Soak and Dry the Potatoes
Dice the potatoes into 1-inch cubes and add to a bowl of cold water. Let them soak for 10 to 15 minutes. Drain, rinse, and pat completely dry with a kitchen towel. This is the step that makes them actually crispy.
Step 2: Cook the Potatoes
Toss the dried potato cubes with olive oil, paprika, garlic powder, salt, and pepper. Air fry at 400°F for 15 to 20 minutes shaking the basket halfway, or spread on a baking sheet and bake at 450°F for 25 to 30 minutes flipping halfway. Either way you want golden edges and a tender center.




Step 3: Cook the BBQ Chicken
Season the chicken pieces with the spice blend. Heat oil in a large skillet over medium-high heat and cook the chicken for 6 to 8 minutes until browned and cooked through. Add the garlic and cook 30 to 60 seconds. Reduce the heat to low, stir in the BBQ sauce, and toss until every piece is evenly coated and the sauce is warmed through.



Step 4: Build the Bowls
Potatoes in the bowl first. BBQ chicken on top. Shredded cheese while everything is still hot. Then whatever toppings you’re working with and a final drizzle of extra BBQ sauce.

Spoon the couscous into bowls. Add the meatballs, a generous scoop of Greek salad, and a big spoonful of tzatziki over everything. Extra dill and feta on top.

Storing and Reheating
Store the chicken, potatoes, and toppings separately in sealed containers in the refrigerator for up to 4 days. Reheat the potatoes and chicken together in the air fryer at 375°F for 4 to 6 minutes to get the potatoes crispy again. A skillet over medium heat also works well. Add fresh toppings after reheating.

- Oven: Spread the potatoes in a single layer on a large baking sheet, making sure they aren’t overcrowded. Bake at 450°F for 25–30 minutes, flipping halfway through, until golden and crispy.
- While the potatoes cook, season the diced chicken with smoked paprika, chili powder, onion powder, salt, and black pepper.
- Heat a large skillet over medium-high heat. Add the oil, followed by the seasoned chicken. Cook for about 6–8 minutes, stirring occasionally, until the chicken is browned and cooked through.
- Add the minced garlic and cook for about 30–60 seconds, until fragrant.
- Reduce the heat to low and stir in the BBQ sauce. Cook for another 1–2 minutes, tossing until the chicken is evenly coated and the sauce is warmed through.
- The chicken should reach an internal temperature of 165°F.
- Divide the crispy potatoes between 4 bowls and then top with the BBQ chicken.
- Top with shredded cheese while the potatoes and chicken are hot, so it can melt. If needed, microwave the potatoes and cheese for 15–30 seconds to melt the cheese.

Notes
- Don’t overcrowd the potatoes. Give them plenty of space so they roast instead of steam.
- Chicken thighs: These will give you juicier, more flavorful chicken, while chicken breast is a little leaner.
- Cheese: Cheddar, Monterey Jack, pepper jack, or a Mexican cheese blend would all work well in place of mozzarella.
