It doesn’t get any better than this Greek Meatball Bowl. We’re talking chicken meatballs stuffed with feta cheese rest on toasted pearl couscous topped with Greek salad and homemade tzatziki. Everything goes into one pan, and you just let it cook, which makes it perfect for a busy night.   5. Stovetop: Heat a large skillet over medium-high heat and lightly coat with oil. Cook the meatballs in batches, turning every few minutes, until golden brown on all sides and the internal temperature reaches 165°F, about 10–12 minutes total.
  6. While the meatballs cook, heat the olive oil in a medium saucepan over medium heat.
  7. Add the pearl couscous and toast for 2–3 minutes, stirring frequently, until lightly golden and fragrant.
  8. Add the chicken broth and salt. Bring to a boil, then reduce the heat to low.
  9. Cover and simmer for 10–12 minutes, stirring once or twice, until the couscous is tender and most of the liquid has been absorbed.
  10. Remove from the heat and let it sit, covered, for 5 minutes. Fluff with a fork.
