Ingredients

For the Oven-Baked Kebabs:
  • 2 lbs ground beef 85% lean is best for juicy kebabs; can swap for lamb or chicken (make sure to not use fat-free, extra lean chicken though)
  • 1 small onion
  • 4 cloves garlic
  • ½ cup fresh parsley
  • 1 tbsp ground cumin
  • 1 tbsp ground coriander
  • 1 tbsp sweet paprika
  • ½ tsp chili powder
  • 2 tsp salt
  • ¼ tsp black pepper
  • ½ tsp baking soda this helps to keep the meat super tender
  • 2 tbsp olive oil
For the Tzatziki Sauce:
  • ½ cup grated cucumber if you are using thick-texture yogurt, don't drain the moisture out of the cucumber
  • 1 cup Greek yogurt
  • 1 tbsp lemon juice
  • ½ tbsp olive oil
  • 1 small garlic clove
  • ½ tsp salt
  • 1 tbsp fresh dill
Optional for Serving:
  • Pita or flatbread
  • Tomatoes
  • Cucumbers
  • Fresh herbs

Equipment

  • Baking sheet (12x 10)

Method

Preheat the Oven
  1. Preheat your oven to 450°F and line a large baking sheet (I used 12 x 10 pan and it worked great) with parchment paper.
Make the Flavor Base
  1. In a food processor, blend the onion, garlic, and parsley until it forms a smooth paste.
Mix the Meat
  1. In a large bowl, combine the ground meat with the onion mixture, spices, and baking soda. Mix gently with your hands until just combined—don’t overmix.
Shape the Kebabs
  1. Transfer the mixture to your prepared baking sheet and press it into a rectangle about ½ inch thick
Slice into Strips
  1. Using a spatula or knife, cut the meat into long strips, slicing all the way through.
Brush with Oil
  1. Lightly brush the top with olive oil for better browning.
Bake
  1. Bake for 10–12 minutes. If excess liquid forms, carefully drain some of it off (don’t drain all of it to retain the juiciness; the meat will absorb some of the juices back as it cools off).
Broil for Color
  1. Switch to broil and cook for an additional 2 minutes until nicely browned.

Amazing flavor especially paired with tzatziki sauce. The broiler really crisped up the meat well!

Delicious and so quick to come together! My toddler even preferred this meat over his usual basic taco meat.
