  • 2 cups uncooked ditalini pasta
  • 1 tablespoon cooking oil
  • ½ medium yellow onion finely diced
  • 1 lb Italian sausage mild or hot
  • 4-5 cloves garlic minced
  • 2½ cups beef or chicken bone broth
  • ½ cup heavy cream
  • 1 tablespoon unsalted butter
  • ⅓ cup freshly grated Parmesan cheese plus more for serving
  • Fresh parsley chopped, for garnish
  • Black pepper to taste

Method
 

  1. Heat the oil in a large skillet over medium heat. Add the onion and cook for 2–3 minutes, until softened.
  2. Add the Italian sausage and cook, breaking it apart, until browned and cooked through.
  3. Stir in the garlic and cook for 30 seconds, until fragrant.
  4. Add the uncooked ditalini and broth. Bring to a gentle simmer and cook uncovered for 10–12 minutes, stirring occasionally, until the pasta is tender and most of the liquid has been absorbed. Add a splash of broth if needed.
  5. Reduce the heat to low. Stir in the heavy cream and black pepper and cook for 1–2 minutes.
  6. Remove from the heat and stir in the butter and Parmesan until melted and creamy.
  7. Garnish with fresh parsley and additional Parmesan. Serve immediately.
