How To Make Loaded Potato Taco Bowls
Step 1: Cook the Potatoes
In a large bowl, toss the diced potatoes with olive oil, paprika, garlic powder, salt, and black pepper.
Air Fryer Method:
Air fry at 400°F for 15–20 minutes, shaking halfway through, until golden and crispy.
Oven Method:
Bake at 450°F for about 30 minutes, flipping once, until crispy on the outside and tender inside.
Step 2: Make the Taco Beef
Heat olive oil in a skillet over medium heat. Add the chopped onion and sauté until softened.
Add the ground beef and cook for 5–10 minutes, breaking it up as it browns. Drain excess fat if needed. Stir in taco seasoning, tomato paste, and bone broth (or water). Simmer for 2–3 minutes until well combined and saucy.

Step 3: Prepare the Guacamole
Add all guacamole ingredients to a bowl. Mash until mostly smooth, leaving a little texture if desired. Taste and adjust salt or lime juice as needed.
Step 4: Make the Salsa
Combine all salsa ingredients in a bowl and stir well. Let it sit for a few minutes to allow the flavors to meld.

Step 5: Assemble the Loaded Potato Taco Bowls
Divide crispy potatoes between bowls. Top with seasoned beef, shredded cheese, guacamole, and fresh salsa. Serve immediately while everything is warm.
