How to Make This Harvest Salad
1. Roast the Squash
Preheat the oven to 425°F.
Add the cubed butternut squash or sweet potatoes to a bowl. Toss with olive oil, paprika, garlic powder, and salt until evenly coated.
Spread the squash onto a parchment-lined baking sheet and roast for about 30 minutes, or until tender and lightly browned.
2. Prepare the Chickpeas
