Why I Love Easy Fall Dinners
Fall is one of my favorite seasons to cook because cozy food doesn’t have to mean complicated food.
The best fall dinners are the ones that make the house smell amazing, taste like you spent hours cooking, and still fit into a busy weeknight. That’s why I love having a mix of 30-minute meals, one-pot dinners, sheet-pan recipes, soups, casseroles, and make-ahead meals in my fall rotation.
If you’re meal planning for your family, choose a couple of quick dinners, one cozy soup or stew, and one meal that makes great leftovers. It makes busy fall evenings so much easier.
Tips for Planning Easy Fall Dinners
Choose one-pot or one-pan meals.
Recipes that cook in one pot or on one sheet pan mean less cleanup after dinner.
Keep a few 30-minute meals in your rotation.
Busy nights happen. Having a few quick dinner recipes you know your family loves can save you from reaching for takeout.
Use seasonal ingredients.
Sweet potatoes, butternut squash, pumpkin, Brussels sprouts, apples, and hearty greens are all great ways to bring fall flavors to the table.
Make extra when you can.
Soups, stews, casseroles, and pasta dishes often make great leftovers for lunch the next day.
Don’t forget the protein.
Chicken, ground beef, steak, Italian sausage, and turkey are easy ways to turn seasonal vegetables and grains into satisfying family dinners.

Easy fall dinner recipes
Method
- Heat the oil in a large skillet over medium heat. Add the onion and cook for 2–3 minutes, until softened.
- Add the Italian sausage and cook, breaking it apart, until browned and cooked through.
- Stir in the garlic and cook for 30 seconds, until fragrant.
- Add the uncooked ditalini and broth. Bring to a gentle simmer and cook uncovered for 10–12 minutes, stirring occasionally, until the pasta is tender and most of the liquid has been absorbed. Add a splash of broth if needed.
- Reduce the heat to low. Stir in the heavy cream and black pepper and cook for 1–2 minutes.
- Remove from the heat and stir in the butter and Parmesan until melted and creamy.
- Garnish with fresh parsley and additional Parmesan. Serve immediately.
Notes
- Use mild Italian sausage for a family-friendly version or hot Italian sausage for more heat.
- Beef broth or bone broth adds a rich, savory flavor, but chicken broth also works.
- Taste before adding salt because the sausage, broth, and Parmesan can all be salty.
- If the pasta thickens too much, stir in a splash of warm broth or cream.
- Leftovers can be refrigerated for up to 3 days. Reheat gently with a splash of broth or cream.
- Ground pork or beef sausage should reach 160°F; chicken or turkey sausage should reach 165°F.
