Ingredients for Healthy Pumpkin Bars
The Wet Ingredients
Pumpkin puree: Use plain canned pumpkin puree, not pumpkin pie filling. Pumpkin adds moisture and that classic fall flavor.
Maple syrup: Pure maple syrup adds natural sweetness and a warm flavor that pairs especially well with pumpkin.
Peanut butter: Natural creamy peanut butter adds richness and helps create the soft, chewy texture. Stir well before measuring if the oil has separated.
Eggs: Eggs help bind the ingredients and give the bars structure.
Vanilla extract: A little vanilla rounds out the pumpkin, peanut butter, and warm spices.
The Dry Ingredients
Oat flour: Oat flour keeps these pumpkin bars tender and gives them a soft, slightly chewy texture.
Ground flaxseed: Flaxseed adds texture and helps absorb some of the moisture from the pumpkin.
Pumpkin pie spice: This is where all those cozy fall flavors come together.
Baking powder: Helps the bars rise slightly as they bake.
Kosher salt: A small amount balances the sweetness and enhances the other flavors.
The Mix-Ins
Pecans: Chopped pecans add a little crunch to the soft pumpkin bars.
Semi-sweet chocolate chips: Chocolate chips add melty chocolate throughout the bars and make them extra delicious. Sprinkle a few more over the top before baking for an extra chocolatey finish.
See the recipe card below for exact ingredient amounts, nutritional information, and detailed instructions.
Variations
- Add more chocolate: Sprinkle extra chocolate chips over the top before baking for a more chocolate-forward pumpkin bar.
- Use different nuts: Pecans can be swapped for walnuts if that’s what you have on hand.
- Make them nut-free: Use a nut-free peanut butter alternative and omit the pecans. Keep in mind that the texture may vary depending on the brand of peanut butter alternative.
How to Make Healthy Pumpkin Bars
These pumpkin bars come together quickly and don’t require a mixer.
Step 1: Prep the Pan
Preheat the oven to 350°F. Line a 9×9-inch baking dish with parchment paper, leaving some overhang for easy removal.
Step 2: Make the Batter
In a large bowl, whisk together the pumpkin puree, maple syrup, peanut butter, eggs, and vanilla until smooth.
Add the oat flour, ground flaxseed, pumpkin pie spice, baking powder, and salt. Whisk just until combined.

Step 3: Add the Mix-Ins
Fold in the chocolate chips and chopped pecans. Transfer the batter to the prepared baking dish and spread it into an even layer.
Sprinkle additional pecans and chocolate chips over the top, if desired.

Step 4: Bake and Cool
Bake for 30–35 minutes, or until a toothpick inserted into the center comes out mostly clean.
Let the bars cool in the pan for 20 minutes, then use the parchment overhang to lift them out. Let cool completely before slicing into 16 bars.

Expert Tips for the Best Pumpkin Bars
- Use pumpkin puree, not pumpkin pie filling. Pumpkin puree gives you control over the sweetness and spices.
- Stir your peanut butter well. Natural peanut butter can separate in the jar, so mix it thoroughly before measuring for the most consistent texture.
- Don’t overmix the batter. Once you add the dry ingredients, mix just until everything is combined.
- Don’t overbake. The center should be set, but the toothpick can have a few moist crumbs. The bars will continue to firm up as they cool.
- Let them cool completely. These bars are soft when warm and become easier to slice once completely cooled.
How to Store Pumpkin Bars
Store the bars in an airtight container at room temperature for up to 2 days. After that, refrigerate them for up to 4 additional days.
For the best texture, let refrigerated bars sit at room temperature for a few minutes before serving.
Can You Freeze Pumpkin Bars?
Yes! Slice the cooled bars and place them in a freezer-safe bag or container, removing as much air as possible. Freeze for up to 2 months.
Thaw overnight in the refrigerator before serving.
